Crust Preparation

Make the Tart Crust
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

Add the softened butter and mix until the mixture resembles coarse crumbs.

In a small bowl, whisk the egg yolk and cold water together. Gradually add to the flour mixture, mixing until it forms a dough.

Chill the crust in the refrigerator for at least 30 minutes.

Preheat the oven to 350°F (175°C). Bake the crust for 20-25 minutes, or until lightly golden. Remove and let cool completely.

In a medium bowl, beat the softened cream cheese until smooth and creamy.

Add the powdered sugar and vanilla extract, and continue to beat until well combined.

In a separate bowl, whip the heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Spread the cream filling evenly over the cooled tart crust.

Arrange the assorted seasonal fruits on top of the cream filling in a decorative pattern.

In a small saucepan, heat the apricot glaze over low heat until melted, then brush it over the fruits for a shiny finish.
