Tortilla Base

Prepare Tortilla Base

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk together until evenly mixed.

    Add Wet Ingredients

    Make a well in the center of the dry mixture. Add the water and olive oil into the well and start mixing with a fork until the dough begins to come together.

    Knead the Dough

    Transfer the dough onto a lightly floured surface. Knead for about 5 minutes until smooth and elastic. You may need to add a little more flour if the dough is too sticky.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 15 minutes.

Prepare Fire Roasted Fillings

    Chop Vegetables

    While the dough is resting, chop the bell pepper and red onion into bite-sized pieces.

    Roast the Vegetables

    In a skillet over medium-high heat, add the chopped bell pepper and red onion. Sauté for 5-7 minutes until they are slightly charred and tender.

    Add Beans and Corn

    Add the corn kernels and black beans to the skillet. Stir in the chili powder, cumin, and salt to taste. Cook for another 3-4 minutes until heated through.

    Add Lime Juice and Cilantro

    Remove from heat and stir in the lime juice and chopped cilantro. Set aside.

Cook Tortillas

    Divide and Roll Out Dough

    Divide the rested dough into 8 equal portions. Roll each portion into a ball and then flatten it into a circle about ¼ inch thick.

    Cook Tortillas

    Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side until golden and cooked through.

Assemble and Serve

    Fill Tortillas

    Once the tortillas are cooked, place a generous amount of the fire-roasted filling onto each tortilla.
