Chocolate Mousse Preparation

Melt Dark Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Stir occasionally to ensure even melting.

Prepare Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Gradually add the melted chocolate to the egg mixture, stirring constantly until combined. Stir in the vanilla extract.

Whip Heavy Cream
In a large mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Fold in Cream
Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse
Transfer the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
Serving

Prepare Whipped Cream
Just before serving, whip the cream until soft peaks form. You can sweeten it with a little sugar if desired.

Assemble the Parfaits
Layer the chocolate mousse with whipped cream in serving glasses. Top with dark chocolate shavings and fresh berries if using.
