Method

Preparing the Chipotle Chicken

    Marinate the Chicken

    In a mixing bowl, combine olive oil, chipotle powder, cumin, salt, and black pepper. Add the chicken breasts and coat them evenly with the marinade. Allow to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Grill the Chicken

    Preheat a grill or grill pan over medium heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from heat and let rest for 5 minutes before slicing.

Making the Lemon Crema

    Combine Ingredients

    In a small bowl, mix together sour cream, lemon juice, garlic powder, and salt. Adjust seasoning to taste. Set aside.

Preparing the Chipotle Aioli

    Mix Aioli Ingredients

    In another small bowl, whisk together mayonnaise, minced chipotle peppers, lime juice, and garlic. Mix until smooth and well combined.

Assembling the Sandwich

    Build the Panini

    On one slice of telera bread, spread a layer of chipotle aioli. Add sliced grilled chicken, avocado, pepper jack cheese, and pickled red onion. Spread a layer of lemon crema on top, then place another slice of telera bread on top.

    Grill the Panini

    Preheat a panini press or a skillet with a bit of olive oil over medium heat. Grill the assembled sandwich for about 3-4 minutes, or until the bread is golden brown and the cheese has melted. Repeat with the remaining sandwiches.

Serving

    Plate and Serve

    Cut the panini in half and serve with a side of blue corn chips and salsa.
