For the Blue Corn Chips

Prepare the Dough
In a large mixing bowl, combine the blue cornmeal, all-purpose flour, and salt. Mix well.

Add Water
Gradually add water to the dry ingredients, mixing until a dough forms. It should be soft but not sticky.

Rest the Dough
Cover the bowl with a damp cloth and let the dough rest for about 30 minutes.

Roll Out the Dough
After resting, divide the dough into small balls. Using a rolling pin, roll each ball out into thin circles.

Fry the Chips
Heat the oil in a deep skillet or frying pan over medium-high heat. Fry the rolled-out dough in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

Prepare the Avocados
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Add salt to taste and mix well. Adjust lime juice and salt according to preference.

Transfer guacamole to a serving bowl and serve with the blue corn chips.
