    Prepare the Ingredients

    Dice the beef chuck roast into 1-inch cubes. Chop the carrots, potatoes, onion, and celery into bite-sized pieces. Mince the garlic.

Cooking

    Sear the Beef

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, celery, and garlic. Sauté for about 3-4 minutes until the onions are translucent. Add the carrots and potatoes, stirring for another 2-3 minutes.

    Combine Ingredients

    Return the seared beef to the pot. Add the beef broth, red wine, bay leaves, thyme, salt, and black pepper. Stir to combine all ingredients.

    Thicken the Stew

    In a small bowl, mix the all-purpose flour with a few tablespoons of cold water to create a slurry. Stir this into the stew to help thicken it.

    Simmer

    Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 2 hours or until the beef is tender and the vegetables are cooked through.

Serving

    Remove the bay leaves before serving. Ladle the stew into bowls and serve hot. Enjoy your hearty beef stew!
