Prepare Pastry Dough

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well mixed.

Combine Mixtures
Cut the unsalted butter into small pieces and add it to the dry ingredients. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs. Pour in the wet ingredients and mix until just combined. Do not overmix.

Chill Dough
Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
Prepare Fillings

Make Cream Cheese Filling
In a medium bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract; beat until creamy and well combined.

Prepare Fruit Filling
If using fruit preserves, ensure they are at room temperature and stir them slightly to loosen.
Assemble Pastries

Roll Out Dough
On a floured surface, roll out the chilled dough to about 1/4 inch thickness. Cut into squares or circles, depending on your preference.

Fill Pastries
Place a small spoonful of cream cheese filling in the center of each pastry. For some, add chocolate chips, and for others, add fruit preserves.

Seal Pastries
Fold the dough over the filling and press the edges to seal. Use a fork to crimp the edges if desired.

Apply Egg Wash
Brush the tops of the pastries with egg wash and sprinkle with granulated sugar.
Bake Pastries

Preheat Oven
Preheat your oven to 375°F (190°C).

Place the pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
