Method

Preparation of Potatoes

  1. 1

    Cook the Potatoes

In a large pot, place the potatoes and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and let cool.

  2. 2

    Chop the Potatoes

Once cooled, peel the potatoes if desired and chop them into bite-sized pieces.

Preparation of Vegetables and Eggs

  1. 3

    Chop the Vegetables

While the potatoes are cooling, chop the celery and finely dice the red onion.

  2. 4

    Prepare the Eggs

Peel the hard-boiled eggs and chop them into small pieces.

Making the Dressing

  1. 5

    Combine the Dressing Ingredients

In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Mix well until smooth.

Combining Everything

  1. 6

    Mix the Salad

Add the chopped potatoes, celery, red onion, and hard-boiled eggs to the dressing. Gently fold everything together until well combined.

  2. 7

    Taste and Adjust

Taste the salad and adjust seasoning with more salt or pepper as needed.

Garnishing and Serving

  1. 8

    Garnish the Salad

Transfer the potato salad to a serving bowl and sprinkle with fresh parsley and additional paprika if desired.

  2. 9

    Chill Before Serving

Cover the potato salad and refrigerate for at least 1 hour before serving to allow flavors to meld.
