Method

Preparation of Oysters

1

Clean the Oysters

Rinse the fresh oysters under cold running water to remove any dirt and debris. Use a brush if necessary.

2

Shuck the Oysters

Using an oyster knife, carefully insert the knife into the hinge of the oyster. Twist the knife to pop the shell open, then slide the knife along the top shell to cut the muscle. Remove the top shell and carefully detach the oyster from the bottom shell, leaving it in place.

Prepare Mignonette Sauce

3

Mix the Ingredients

In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Stir well to combine.

Serve

4

Arrange the Oysters

On a serving platter, arrange the shucked oysters on the half shell. Ensure they are stable and not tipping over.

5

Add Mignonette Sauce

Spoon a small amount of the mignonette sauce onto each oyster.

6

Garnish and Serve

Garnish the platter with lemon wedges and chopped parsley. Serve immediately.
