Preparation of Seafood

Cook the Octopus

Bring a large pot of salted water to a boil. Add the octopus and cook for about 30 minutes until tender. Remove from water and let cool before slicing into bite-sized pieces.

Prepare the Shrimp

In a separate pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and cool under cold water, then chop into bite-sized pieces.

Dice the red onion, tomatoes, cucumber, and jalapeño. Finely chop the cilantro.

Combine Everything

In a large mixing bowl, combine the cooked octopus, shrimp, diced vegetables, lime juice, olive oil, salt, and black pepper. Toss gently to combine.

Chill the campenchana in the refrigerator for at least 30 minutes before serving. Serve cold, garnished with additional cilantro if desired.
