Prepare the Filling

Soak Guajillo Peppers

In a bowl, soak the guajillo peppers in hot water for about 15 minutes until soft. Drain and remove the stems and seeds.

Cook the Meat

In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Sauté Vegetables

Add diced onion, minced garlic, and chopped habanero to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.

Blend the Sauce

In a blender, combine the soaked guajillo peppers, cilantro leaves, salt, and black pepper. Blend until smooth, adding a little water if necessary.

Combine Ingredients

Pour the blended sauce into the skillet with the beef mixture. Stir to combine and cook for another 5 minutes, allowing the flavors to meld.

Assemble the Enchiladas

Prepare the Tortillas

In a separate pan, briefly warm the corn tortillas over medium heat until pliable, about 30 seconds on each side.

Fill the Tortillas

On each tortilla, place a generous amount of the beef filling and a sprinkle of cheese. Roll the tortilla tightly to enclose the filling.

Arrange in Baking Dish

Place the rolled tortillas seam side down in a greased baking dish. Pour the enchilada sauce over the top and sprinkle with remaining cheese.

Bake

Preheat the oven to 375°F (190°C). Bake the enchiladas uncovered for 20-25 minutes until the cheese is melted and bubbly.
