Dough Preparation

Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Mix well until fully combined.

Add Wet Ingredients
Make a well in the center of the dry ingredients and pour in the warm water and olive oil. Stir with a wooden spoon until a dough starts to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

Let the Dough Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Za'atar Mixture Preparation

Combine Ingredients
In a small bowl, mix the za'atar spice blend with the olive oil until well combined to create a paste.
Assembling the Manakeesh

Preheat Oven
Preheat your oven to 450°F (230°C) and place a baking stone or sheet inside to heat up.

Shape the Dough
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a round flatbread shape, about 1/4 inch thick.

Spread the Za'atar Mixture
Place the rolled-out dough on a baking sheet or parchment paper. Spread a generous amount of the za'atar mixture evenly over the top.

Add Cheese Toppings
Sprinkle the feta cheese and mozzarella cheese evenly over the za'atar mixture. Add dollops of labneh on top.

Bake
Carefully transfer the assembled manakeesh onto the preheated baking stone or sheet. Bake for 10-12 minutes, or until the edges are golden brown and the cheese is bubbly.
Serving

Slice and Serve
Remove the manakeesh from the oven and let it cool slightly. Cut into wedges and serve warm.
