Prepare Cucumber

Grate and Drain Cucumber
Grate the cucumber using a box grater or food processor. Place the grated cucumber into a fine mesh strainer or cheesecloth and sprinkle lightly with salt. Let it sit for 10 minutes to draw out excess water, then squeeze out as much liquid as possible. This step is crucial to avoid a watery tzatziki.
Make Tzatziki

Combine Ingredients
In a mixing bowl, combine the Greek yogurt, drained cucumber, finely minced garlic, chopped fresh dill, lemon juice, and olive oil. Stir well to combine all ingredients evenly.

Add salt and black pepper to taste. Mix thoroughly. Adjust seasoning as needed.

Cover the bowl and refrigerate the tzatziki for at least 1 hour before serving to allow the flavors to meld.
