Brownie Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper.

Melt Butter
In a medium saucepan, melt the unsalted butter over low heat. Remove from heat once melted and let it cool slightly.

Mix Sugars and Eggs
In a large mixing bowl, combine the granulated sugar, brown sugar, and the melted butter. Mix until smooth, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

Combine Wet and Dry Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

Add Tahini and Pistachios
Fold in the tahini and chopped pistachios until evenly distributed throughout the brownie batter.

Bake the Brownies
Pour the brownie batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Once baked, allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, cut into squares.
