Wrap Preparation

1. Cook the Sujuk

In a skillet over medium heat, place the sujuk slices and cook for 5-7 minutes until browned and heated through. Remove from heat.

2. Prepare the Sumac Onions

In a bowl, mix the sliced onions with sumac and let sit for about 5 minutes to enhance the flavor.

3. Assemble the Wraps

Spread hummus evenly on each tortilla or flatbread. Layer with cooked sujuk, pickles, sliced tomatoes, and sumac onions. Roll the wrap tightly and place seam side down.

4. Prepare the Potatoes

Peel and cut the potatoes into thin fries. Rinse them in cold water and pat dry with a paper towel.

5. Fry the Potatoes

In a deep frying pan, heat oil over medium-high heat. Once hot, carefully add the fries in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.
