Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Toppings
While the dough is rising, slice the sujuk into thin rounds. Set aside.

Preheat Oven
Preheat your oven to 220°C (425°F). If using a pizza stone, place it in the oven to heat up.

Shape the Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat circle about 1/4 inch thick.

Add Toppings
Transfer the rolled dough to a baking sheet or pizza stone. Sprinkle half of the mozzarella cheese over each base, then layer with sliced sujuk and sprinkle za'atar on top.

Bake the Manakeesh
Bake in the preheated oven for about 10-12 minutes, or until the edges are golden and the cheese is bubbling.

Serve
Remove the manakeesh from the oven, top each with a fried egg, and serve immediately.
