Tomato & Pepper Stew

Sauté aromatics
Heat olive oil in a large skillet over medium heat. Add chopped onion and diced red bell pepper. Sauté for 5–7 minutes, stirring occasionally, until softened and slightly caramelized.

Simmer the tomato base
Pour in crushed tomatoes, add salt and black pepper. Stir well and bring to a gentle simmer. Reduce heat to low and let it cook uncovered for 10–12 minutes, stirring occasionally, until thickened slightly.
Eggs

Add eggs to stew
Using the back of a spoon, make two small wells in the tomato mixture. Crack one egg into each well, keeping yolks intact.
