Prepare the Dough

Activate the Yeast
In a medium bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for 5–10 minutes until it becomes foamy.

Mix the Dough
In a large bowl or stand mixer, combine the flour and salt. Add in the foamy yeast mixture and olive oil. Mix until a shaggy dough forms.

Knead the Dough
Knead the dough on a lightly floured surface for 8–10 minutes until soft, smooth, and elastic. If using a stand mixer, knead using the dough hook for 6–7 minutes on medium speed.

First Rise
Place the dough in a lightly oiled bowl, turning it once to coat all sides. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 1 to 1.5 hours until it doubles in size.
Shape and Roll

Divide the Dough
After the first rise, punch down the dough and transfer it to a lightly floured surface. Divide the dough into 8 equal pieces and shape each into a ball.

Roll the Pitas
Using a rolling pin, roll each dough ball into a circle about 6 inches in diameter and about 1/4 inch thick. Dust with flour as needed to prevent sticking.

Preheat the Oven or Skillet
Preheat the oven to 475°F (245°C) and place a baking stone or an inverted baking sheet on the middle rack, or alternatively, preheat a heavy-bottomed skillet or cast iron pan over medium-high heat.

Transfer cooked pitas to a clean kitchen towel and cover to keep warm and soft. Repeat with remaining dough.
