Prepare the Dough

Activate the Yeast
In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for 5–10 minutes until the mixture becomes frothy and bubbly, indicating the yeast is active.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and olive oil. Mix until a shaggy dough forms.

Knead the Dough
Turn the dough out onto a lightly floured surface and knead for 8–10 minutes, until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5–6 minutes.

Divide and Shape
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball. Let them rest for 10 minutes, covered, to relax the gluten.

Roll Out the Pitas
On a lightly floured surface, roll each dough ball into a 6–7 inch round, about 1/4 inch thick. Keep the rolled-out rounds covered with a towel to prevent drying.

Cook the Pitas
Heat a cast iron skillet or heavy-bottomed pan over medium-high heat. Place one round into the hot skillet and cook for 1–2 minutes, until bubbles form on the surface. Flip and cook the other side for another 1–2 minutes. Flip again if needed until the pita puffs up. Repeat with remaining dough.

Cool and Store
Place cooked pitas on a clean towel and cover to soften. Once cooled, store in an airtight container or freeze for longer storage.
