Prepare the Ingredients
Rinse the green lentils and black beans under cold water. If using canned black beans, ensure they are drained and rinsed.

Slice the Onions
Peel and thinly slice the onions. Set aside half for frying and half for the stew.

Chop the Garlic
Mince the garlic cloves and set aside.

Chop the Parsley
Finely chop the fresh parsley and set aside for garnish.

Add Lentils and Broth
Stir in the rinsed green lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes.

Add Black Beans
After 20 minutes, add the black beans to the pot. Continue to simmer for another 15-20 minutes, or until the lentils are tender and the stew has thickened.

Fry the Onions
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the reserved sliced onions (for frying) and cook until crispy and golden brown. Remove from heat and drain on paper towels.
Serving

Plate the Dish
Serve the spiced lentil and black bean stew in bowls. Top with crispy fried onions and a sprinkle of fresh parsley.
