Prepare the Lentils
Rinse the organic lentils under cold water and drain. Set aside.

Chop the Onions
Peel and slice the onions thinly. Set aside.
Cooking

Sauté Onions
In a large pot, heat a tablespoon of oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are caramelized and golden brown, about 15-20 minutes.

Add Lentils and Spices
Once the onions are caramelized, add the rinsed lentils, ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Stir well to combine.

Add Vegetable Broth
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender.

Incorporate White Beans
Once the lentils are tender, add the cooked or canned white beans to the pot. Stir gently to combine and let simmer for an additional 5-10 minutes to heat the beans through.

Ladle the mujadara into bowls, garnish with chopped fresh parsley, and serve with lemon wedges on the side.
