Labneh Base

Method

Prepare the Labneh

    Combine yogurt and salt

    In a medium bowl, mix the Greek yogurt with kosher salt until fully combined.

    Strain the yogurt

    Line a fine-mesh sieve with cheesecloth or a clean thin kitchen towel and set it over a bowl. Pour the salted yogurt into the lined sieve. Gather the cloth edges and twist to secure. Place in the refrigerator and allow to drain for 12 to 24 hours, until thick and creamy.

    Transfer labneh

    After draining, transfer the thickened labneh to a clean bowl and discard the liquid (whey) collected in the bowl.

Flavor the Labneh

    Mix flavoring ingredients

    Add the finely chopped mint, olive oil, lemon zest, grated garlic, and black pepper to the bowl of labneh. Stir thoroughly until all ingredients are well incorporated.

    Taste and adjust seasoning

    Taste the mint labneh and adjust salt or pepper if needed.

Garnish and Serve

    Plate the labneh

    Spoon the mint labneh into a shallow serving bowl or plate, creating a swirl or well in the center with the back of a spoon.
