Fries Preparation

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thick fries, about 1/4 inch wide.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

Dry the Fries
Drain the potatoes and pat them dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches. Fry until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels.

Season the Fries
Sprinkle the hot fries with salt to taste while they're still hot.
Whipped Garlic Sauce Preparation

Prepare the Garlic
Peel and finely mince the garlic cloves.

Mix the Ingredients
In a mixing bowl, combine the minced garlic, mayonnaise, lemon juice, and salt.

Whip the Sauce
Using a hand mixer or whisk, whip the mixture until it is smooth and creamy.

Taste and Adjust
Taste the sauce and adjust seasoning if necessary. Set aside.

Prepare the Fries
Once the fries are cooked and drained, place them on a serving platter.

Add Toppings
Sprinkle the mozzarella cheese generously over the hot fries.

Spoon the whipped garlic sauce over the fries and cheese.

Top with fresh cilantro and drizzle chili sauce to taste.
