Lamb Marinade

Pickles and Serving

Method

Lamb Marinade

  1. 1

    Prepare the Marinade

In a large bowl, combine minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, ground allspice, olive oil, lemon juice, salt, and black pepper.

  2. 2

    Marinate the Lamb

Add the lamb strips to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

Cooking the Lamb

  1. 3

    Cook the Lamb

Preheat a grill or skillet over medium-high heat. Remove the lamb from the marinade and shake off excess. Grill or pan-fry the lamb strips for about 8-10 minutes, turning occasionally until browned and cooked to your desired doneness.

Garlic Sauce

  1. 4

    Make the Garlic Sauce

In a bowl, whisk together minced garlic and egg yolk. Gradually add vegetable oil while whisking continuously until the sauce thickens. Stir in lemon juice and salt to taste.

Serving

  1. 5

    Assemble the Dish

Serve the cooked lamb strips in pita bread, topped with garlic sauce, pickled cucumbers, and chopped parsley.
