Preparation of Halloumi

Cutting the Halloumi
Slice the halloumi cheese into thick strips, approximately 1 cm wide.

Drying the Halloumi
Pat the halloumi strips with a paper towel to remove excess moisture.
Frying

Heating the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Frying the Halloumi
Carefully add the halloumi strips to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side.

Draining the Oil
Using a slotted spoon, remove the fried halloumi and place it on a plate lined with paper towels to drain excess oil.
Serving

Tossing with Seasoning
In a large bowl, combine the hot halloumi fries with sumac, chopped fresh mint leaves, and salt to taste. Drizzle with pomegranate molasses and toss gently to coat.

Serve the halloumi fries warm on a serving platter, garnished with extra mint leaves if desired.
