Soak the potato sticks in a bowl of cold water for at least 30 minutes. This helps to make them crispier when fried.

Drain the potatoes and pat them completely dry with a clean kitchen towel or paper towels.

Fry the potatoes
Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 325°F (165°C). Fry the potatoes in batches for 3–4 minutes until they are soft but not browned. Remove with a slotted spoon and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the pre-cooked potatoes for a second time in batches for 2–3 minutes, or until golden brown and crispy. Remove and drain on paper towels again.

Season the fries immediately with salt and black pepper while they are still hot.

Prepare the garlic
Peel and finely mince the garlic cloves. For a milder flavor, you can roast the garlic in the oven at 375°F (190°C) for 10–15 minutes until soft and golden.

In a small mixing bowl, combine the minced garlic, mayonnaise, lemon juice, olive oil, salt, and black pepper.

Whisk everything together until smooth and well combined. Taste and adjust seasoning if needed.

Transfer to a serving bowl and refrigerate for at least 10 minutes before serving to let the flavors meld.
