Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine the warm water (about 110°F or 43°C) and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture along with olive oil.

  3. 3

    Knead Dough

Mix the ingredients until they come together to form a dough. Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

  4. 4

    First Rise

Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Bread Shaping and Baking

  1. 5

    Preheat Oven

Preheat your oven to 475°F (245°C). If you have a baking stone, place it in the oven to heat.

  2. 6

    Shape the Dough

Once the dough has risen, punch it down to release the air. Divide it into 6 equal portions and shape each portion into a ball.

  3. 7

    Roll Flat

On a lightly floured surface, roll each ball into a flat circle about 8-10 inches in diameter, ensuring the edges are slightly thicker.

  4. 8

    Add Toppings

Brush each flatbread with olive oil and sprinkle generously with za'atar spice mix.

  5. 9

    Bake the Bread

Transfer the prepared flatbreads to the hot baking stone or a baking sheet. Bake for about 5-7 minutes, or until the bread is puffed up and has golden spots.

  6. 10

    Cool and Serve

Remove the bread from the oven and let it cool slightly on a wire rack. Serve warm with your favorite dips or as a side to your meals.
