Roast Chicken

    Prepare and season chicken

    Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels. Rub the outside of the chicken with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Stuff the cavity with the halved lemon.

    Roast the chicken

    Place the chicken on a roasting rack in a roasting pan. Roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste occasionally with pan juices.

    Rest the chicken

    Remove chicken from oven and let it rest for 10–15 minutes before carving. Reserve pan drippings for gravy.

Garlic Mashed Potatoes

    Cook potatoes and garlic

    Place peeled and chopped potatoes and whole garlic cloves in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil and cook for 15–20 minutes or until potatoes are fork-tender.

    Mash and season

    Drain potatoes and garlic. Return to pot and mash with butter and heavy cream. Season with salt and pepper. Keep warm until serving.

Roasted Vegetables

    Prepare vegetables

    Preheat oven to 400°F (200°C). Toss carrots, brussels sprouts, and red onion with olive oil, salt, pepper, and dried thyme on a baking sheet.

    Roast vegetables

    Roast for 25–30 minutes, turning once halfway through, until vegetables are golden and tender.

Gravy

    Make a roux

    In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for 1–2 minutes until golden and bubbly.

    Add liquids and thicken

    Slowly whisk in pan drippings and chicken broth. Bring to a simmer and cook until thickened, about 5–7 minutes. Season with salt and pepper to taste.
