Falafel

Prepare Chickpeas
Soak the chickpeas in water overnight or for at least 8 hours. Drain and rinse before using.

Form Falafel Balls
Scoop the mixture into equal-sized balls (about 1.5 inches in diameter) and place them on a baking sheet.

Fry Falafel
Heat olive oil in a frying pan over medium heat. Fry falafel balls for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.

Rinse Rice
Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

Cook Rice
In a pot, combine rinsed rice, turmeric powder, vegetable broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is tender.

Fluff Rice
Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.

Prepare Vegetables
Chop mixed greens, cucumber, tomato, and radishes into bite-sized pieces.

Toast the pita bread until crispy, then break it into pieces.
