Method

Falafel Preparation

  1. 1

    Soak the Chickpeas

In a large bowl, cover the dried chickpeas with water and soak them overnight. Ensure the water level is several inches above the chickpeas as they will expand.

  2. 2

    Make the Falafel Mixture

After soaking, drain and rinse the chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together when pressed. If needed, add flour to help bind the mixture.

  3. 3

    Form the Falafel Balls

Using your hands, form the chickpea mixture into small balls or patties (about 1.5 inches in diameter). Place them on a tray or plate.

  4. 4

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Falafel

Carefully add the falafel balls to the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Tahini Sauce Preparation

  1. 6

    Mix the Sauce

In a bowl, combine tahini, lemon juice, minced garlic, water, and salt. Whisk until smooth and creamy. Adjust the consistency by adding more water if needed.
