Falafel Preparation

    Prepare Chickpeas

    Drain and rinse the canned chickpeas under cold water. Place them on a clean towel to dry for about 10 minutes.

    Mix Ingredients

    In a food processor, combine the drained chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, flour, salt, and black pepper. Pulse until the mixture is coarse but well combined. Scrape down the sides as needed.

    Chill Mixture

    Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 1 hour to help it firm up.

    Form Balls

    After chilling, remove the mixture from the fridge. Using your hands, form small balls or patties (about 1.5 inches in diameter) and set aside on a plate.

    Heat Oil

    In a deep pot, heat vegetable oil over medium-high heat to about 180°C (350°F).

    Fry Falafel

    Carefully place the falafel balls into the hot oil, working in batches. Fry for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

    Mix Sauce Ingredients

    In a bowl, combine tahini, lemon juice, minced garlic, water, and salt. Whisk until smooth, adding more water if needed to reach your desired consistency.

    Finish Sauce

    Drizzle olive oil on top of the tahini sauce before serving, if desired.
