Marinated Chicken

Marinated Chicken

    Prepare Marinade

    In a large bowl, combine yogurt, lemon juice, minced garlic, cumin, coriander, paprika, salt, black pepper, and olive oil. Mix well to form a smooth marinade.

    Marinate Chicken

    Add chicken thighs to the marinade and coat thoroughly. Cover and let marinate in the refrigerator for at least 1 hour (preferably overnight for best flavor).

    Cook Chicken

    Heat a grill pan or skillet over medium-high heat. Cook marinated chicken thighs for 5–6 minutes on each side, or until fully cooked and slightly charred. Remove and slice into strips.

Garlic Sauce

    Make Garlic Sauce

    In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth. Refrigerate until ready to use.

Sumac Onions

    Prepare Sumac Onions

    In a small bowl, toss thinly sliced red onion with sumac, salt, and lemon juice. Let sit for at least 10 minutes to allow flavors to meld.

Fries

    Fry Potatoes

    Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry potato strips in batches until golden and crispy, about 4–5 minutes per batch. Drain on paper towels and season with salt.

Wrap Assembly

    Assemble Wrap

    Warm flatbread or tortillas slightly. Spread garlic sauce on each wrap, then layer with sliced chicken, sumac onions, sliced pickles, fries, and optional parsley. Roll tightly into a wrap.

    Serve

    Serve wraps immediately while warm. Optionally, cut in half and wrap in parchment paper for easy handling.
