Base Preparation

Cook Brown Rice
In a separate pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then cover and simmer on low for 45 minutes or until rice is tender and water is absorbed.

Prepare Mixed Greens
Wash and dry 2 cups of mixed greens. Tear any larger leaves into bite-sized pieces and set aside.

Grill Chicken
Season 150 grams of chicken breast with salt, pepper, and your choice of herbs. Grill on medium-high heat for 6-7 minutes on each side or until fully cooked. Let rest for a few minutes before slicing.

Prepare Chickpeas
If using canned chickpeas, drain and rinse them. If using dried chickpeas, soak them overnight and cook in boiling water until tender, about 1-1.5 hours. Drain and set aside.
Dips Preparation

Prepare Hummus
Use store-bought hummus or make your own by blending 1 can of drained chickpeas, 2 tablespoons tahini, 2 tablespoons olive oil, 1 garlic clove, lemon juice, and salt to taste until smooth.

Prepare Tzatziki
Combine 1 cup of Greek yogurt with 1 grated cucumber, 1 minced garlic clove, 1 tablespoon olive oil, and fresh dill. Mix well and season with salt.

Make Guacamole
Mash 2 ripe avocados and mix in 1 diced tomato, 1 minced garlic clove, juice of 1 lime, and salt to taste.
Pickles Preparation

Prepare Pickled Red Onions
Slice 1 red onion thinly and soak in a mixture of 1 cup vinegar, 1 cup water, and 1 tablespoon sugar for at least 30 minutes.

Prepare Pickled Cucumbers
Slice 1 cucumber thinly and soak in a mixture of 1 cup vinegar, 1 cup water, and 1 tablespoon salt for at least 30 minutes.

Prepare Kimchi
If using store-bought kimchi, simply open the jar. If making your own, mix Napa cabbage with salt and let it sit for a few hours before mixing with spices and fermenting.
