Marinated Beef

Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, lemon juice, ground cumin, coriander, paprika, salt, and black pepper. Mix well.

Marinate the Beef
Add the thinly sliced beef to the marinade, toss to coat, cover, and refrigerate for at least 1 hour or up to overnight.

Cook the Beef
Heat a large skillet over medium-high heat and cook the marinated beef in batches until browned and cooked through, about 5–6 minutes.

Mix the Sauce
In a small bowl, whisk together tahini paste, lemon juice, minced garlic, and salt. Gradually add water to thin out the sauce to desired consistency.

Fry the Potatoes
Heat the vegetable oil in a deep pot to 180°C (350°F). Fry the potato strips in batches until golden and crispy, about 5–7 minutes. Drain on paper towels and season with salt.

Assemble the Wraps
Warm the flatbreads or pita. Spread a spoonful of tahini sauce on each. Add a portion of cooked beef, sumac onions, pickles, and some fries. Sprinkle with fresh parsley if desired. Roll tightly into a wrap.
