Beef Shawarma Marinade

Prepare the marinade
In a large bowl, combine yogurt, olive oil, vinegar, minced garlic, all the spices, salt, pepper, and lemon juice. Mix well until fully blended.

Marinate the beef
Add the thinly sliced beef to the marinade and mix to coat thoroughly. Cover and refrigerate for at least 2 hours or overnight for best results.

Cook the beef
Heat a large skillet over medium-high heat. Add the marinated beef and cook for 6–8 minutes, stirring occasionally, until the beef is cooked through and slightly crispy on the edges.

Cook the rice
Add the rice to the saucepan and stir to mix with the vermicelli. Add the water and salt, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
Hummus

Blend the hummus
In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, water, salt, and cumin. Blend until smooth and creamy. Add more water, 1 tablespoon at a time, if needed to reach desired consistency.

Serve
Transfer the hummus to a serving bowl and optionally drizzle with a bit of olive oil and sprinkle paprika or chopped parsley on top.

Serve with pickles
Arrange the salad on serving plates and add a side of pickled turnips or cucumbers.
