Beef Shawarma Marinade

Method

Beef Shawarma Marinade

  1. 1

    Prepare the marinade

In a large bowl, combine yogurt, olive oil, vinegar, minced garlic, all the spices, salt, pepper, and lemon juice. Mix well until fully blended.

  2. 2

    Marinate the beef

Add the thinly sliced beef to the marinade and mix to coat thoroughly. Cover and refrigerate for at least 2 hours or overnight for best results.

  3. 3

    Cook the beef

Heat a large skillet over medium-high heat. Add the marinated beef and cook for 6–8 minutes, stirring occasionally, until the beef is cooked through and slightly crispy on the edges.

Vermicelli Rice

  1. 4

    Toast the vermicelli

In a saucepan, melt butter or heat olive oil over medium heat. Add the broken vermicelli noodles and toast them, stirring constantly, until golden brown.

  2. 5

    Cook the rice

Add the rice to the saucepan and stir to mix with the vermicelli. Add the water and salt, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

Hummus

  1. 6

    Blend the hummus

In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, water, salt, and cumin. Blend until smooth and creamy. Add more water, 1 tablespoon at a time, if needed to reach desired consistency.

  2. 7

    Serve

Transfer the hummus to a serving bowl and optionally drizzle with a bit of olive oil and sprinkle paprika or chopped parsley on top.

Salad & Pickles

  1. 8

    Prepare the salad

In a bowl, combine diced tomato, cucumber, red onion, chopped parsley, lemon juice, olive oil, and salt. Toss well and let sit for a few minutes to let the flavors meld.

  2. 9

    Serve with pickles

Arrange the salad on serving plates and add a side of pickled turnips or cucumbers.
