Beef Kofta Skewers

    Prepare the kofta mixture

    In a large bowl, combine ground beef, grated onion, parsley, garlic, cumin, coriander, allspice, cinnamon, paprika, salt, and pepper. Mix thoroughly using your hands until well combined.

    Shape and skewer

    Divide the mixture into 6 portions. Shape each portion into a long oval shape around a soaked skewer, pressing firmly so it holds together.

    Grill the kofta

    Preheat a grill or grill pan over medium-high heat. Brush the koftas lightly with olive oil and grill for 8–10 minutes, turning occasionally until browned and cooked through.

Rice Pilaf

    Cook the rice

    In a saucepan over medium heat, add olive oil and rice. Sauté for 2–3 minutes, stirring frequently. Add water and salt. Bring to a boil, reduce to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed. Remove from heat and let rest covered for 5 minutes. Fluff with a fork before serving.

Hummus

    Blend hummus

    In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth. Add cold water one tablespoon at a time until desired creamy consistency is achieved. Taste and adjust seasoning if needed.

Salad

    Prepare the salad

    In a mixing bowl, combine cherry tomatoes, cucumber, red onion, and parsley. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to coat evenly.

Pita Bread

    Warm the pita

    Lightly warm pita bread in a dry skillet over medium heat for 1–2 minutes per side, or until soft and pliable.
