Method
Beef Kibbeh

Prepare Bulgur
Soak bulgur wheat in water for about 30 minutes until it softens. Drain and set aside.

Cook Pine Nuts
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add pine nuts and sauté until golden brown. Remove from heat and let cool.

Make Kibbeh Mixture
In a large bowl, combine soaked bulgur, ground beef, chopped onion, cooked pine nuts, cinnamon, allspice, salt, and black pepper. Mix well until fully combined.

Shape Kibbeh
Wet your hands and take a portion of the mixture to shape into oval dumplings. Repeat until the mixture is finished.

Rinse Rice
Rinse basmati rice under cold water until the water runs clear to remove excess starch.

Cook Rice
In a saucepan, combine rinsed rice, turmeric, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed.

Prepare Vegetables
In a large bowl, combine chopped romaine lettuce, diced tomatoes, diced cucumber, sliced radishes, chopped parsley, and pomegranate seeds.

Combine Salad
Pour the dressing over the salad and toss well to combine. Serve fresh.
Hummus

Serve Hummus
Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired.
