Method

Preparing the Kibbeh

  1. 1

    Soak the Bulgur

In a bowl, soak the bulgur wheat in warm water for about 30 minutes, or until it becomes soft. Drain and squeeze out excess water.

  2. 2

    Mix the Kibbeh Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Then, add the ground beef, seven spice blend, salt, and black pepper. Cook until the beef is browned. Stir in the pine nuts and cook for another 2-3 minutes. Remove from heat and let it cool.

  3. 3

    Prepare the Kibbeh Shell

In a large bowl, combine the soaked bulgur, ground beef, salt, and black pepper. Mix well until the mixture is smooth and holds together.

  4. 4

    Shape the Kibbeh

With wet hands, take a small portion of the kibbeh mixture and flatten it into a disc. Place a spoonful of the filling in the center and wrap the mixture around the filling to form an oval shape. Repeat this process for the remaining mixture.

Cooking the Kibbeh

  1. 5

    Fry the Kibbeh

In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the kibbeh in batches until they are golden brown on all sides, about 5-7 minutes. Drain on paper towels.

Preparing the Mint Yogurt Sauce

  1. 6

    Mix the Sauce Ingredients

In a bowl, combine plain yogurt, chopped fresh mint, lemon juice, and salt. Stir until well combined and adjust seasoning to taste.
