Form the kefta
Divide the mixture into 8 equal portions and shape each into a flattened oval patty or small log shape, about 4 inches long.

Cook the kefta
Heat olive oil in a large skillet over medium heat. Cook the kefta patties in batches for about 3–4 minutes per side, or until fully cooked through and browned on the outside. Transfer to a plate and keep warm.
Tahini Sauce

Mix tahini sauce
In a small bowl, whisk together tahini paste, lemon juice, minced garlic, and salt. The mixture will thicken.

Adjust consistency
Gradually whisk in cold water, 1 tablespoon at a time, until the sauce reaches a smooth and pourable consistency. Taste and adjust salt or lemon juice as needed.
Wrap Assembly

Prepare the fries
Cook French fries according to package directions or prepare fresh fries. Keep warm until ready to assemble the wraps.

Warm the flatbreads
Warm the flatbreads or pita breads in a dry skillet or oven just until soft and pliable.

Fold the sides of the flatbread over the fillings and roll tightly into a wrap. Serve immediately while warm.
