Beef Kefta

    Mix the Kefta

    In a large bowl, combine the ground beef, grated onion, parsley, cilantro, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix thoroughly using your hands until well incorporated.

    Shape and Cook

    Form the beef mixture into oval or cylindrical patties around skewers or shape into small logs if cooking without skewers. Grill on medium-high heat or cook on a stovetop grill pan for 3–4 minutes per side until fully cooked and nicely charred.

Rice Pilaf

    Toast Vermicelli

    In a saucepan, heat olive oil over medium heat. Add the vermicelli and toast until golden brown, stirring constantly.

    Cook Rice

    Stir in the rice and toast for 1 minute. Add broth and salt. Bring to a boil, then cover and reduce heat to low. Simmer for 15–18 minutes or until rice is tender and liquid is absorbed. Fluff with a fork before serving.

Hummus

    Blend Ingredients

    In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, water, salt, and cumin. Blend until smooth and creamy. Add more water as needed to reach desired consistency. Adjust seasoning to taste.

Salad

    Prepare Salad

    In a bowl, combine cherry tomatoes, cucumber, red onion, and parsley. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine just before serving.

Accompaniments

    Warm Pita and Prepare Pickles

    Warm pita bread in a skillet or oven. Serve alongside pickled turnips or pickles as a tangy contrast to the rich kefta and creamy hummus.
