Shape the kefta
Divide the beef mixture into 8 equal portions. With damp hands, form each portion into an elongated oval shape around a soaked wooden skewer, pressing firmly so the meat adheres well. Repeat until all skewers are prepared.

Grill the skewers
Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking. Grill the kefta skewers for about 3–4 minutes per side, or until fully cooked through and nicely browned on the outside.

Make the tahini sauce
In a small bowl, whisk together the tahini, lemon juice, minced garlic, and salt. Slowly add the cold water while whisking until the sauce reaches a smooth, creamy consistency. Adjust seasoning or water quantity as needed for desired thickness.

Serve
Arrange the grilled kefta skewers on a serving platter. Drizzle with tahini sauce or serve the sauce on the side for dipping. Optionally garnish with chopped parsley or a sprinkle of paprika.
