Method

Preparing the Potatoes

    Peel and Cube Potatoes

    Peel the russet potatoes and cut them into 1-inch cubes. Rinse them under cold water to remove excess starch.

    Boil the Potatoes

    Place the cubed potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for about 8–10 minutes or until just tender but not falling apart. Drain and set aside.

Cooking the Potatoes

    Fry the Potatoes

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the boiled potatoes and sauté for 8–10 minutes, turning occasionally, until golden and crispy on the edges. Remove from pan and set aside.

    Sauté Garlic and Spices

    In the same skillet, add the remaining 1 tablespoon of olive oil. Reduce heat to medium. Add the minced garlic and chopped chili (or chili flakes) and sauté for about 30 seconds until fragrant. Add ground coriander, cumin, paprika, salt, and black pepper. Stir and cook for another 30 seconds.

    Combine with Potatoes

    Return the crispy potatoes to the skillet with the garlic and spice mixture. Toss well to coat the potatoes evenly and cook together for another 2–3 minutes.

Finishing Touches

    Add Fresh Herbs and Lemon

    Turn off the heat. Sprinkle the chopped cilantro over the potatoes and drizzle with lemon juice. Toss everything gently to combine and allow the flavors to meld for 1–2 minutes before serving.
