    Prepare nut mixture

    In a mixing bowl, combine the chopped walnuts, pistachios, sugar, and ground cinnamon. Stir until evenly mixed. Set aside.

    Prepare phyllo and pan

    Preheat your oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter. Unroll phyllo dough and keep it covered with a damp towel to prevent drying out.

    Layer phyllo and nuts

    Place one sheet of phyllo in the baking dish and brush with melted butter. Repeat this process to create a base of 8 sheets. Spread 1/3 of the nut mixture evenly over the phyllo. Add 5 more layers of phyllo, buttering each layer, then spread another 1/3 of the nuts. Repeat with another 5 phyllo layers and the remaining nut mixture. Finish with 8 more layers of buttered phyllo on top.

    Cut and bake

    Using a sharp knife, cut the assembled baklava into diamond or square shapes. Bake in the preheated oven for 45–50 minutes, or until golden brown and crisp.

    Make syrup

    While the baklava is baking, combine water, sugar, honey, lemon juice, and cinnamon stick in a saucepan. Bring to a boil over medium heat, then reduce to a simmer for 10 minutes. Remove from heat and let cool slightly. Discard cinnamon stick.

    Add syrup to baklava

    When baklava is finished baking, immediately pour the warm syrup evenly over the hot pastry. Let the baklava absorb the syrup and cool completely at room temperature for at least 4 hours, or overnight, before serving.
