    Roast the Eggplants

    Preheat your oven to 400°F (200°C). Prick the eggplants a few times with a fork and place them on a baking sheet. Roast in the oven for about 30-40 minutes, turning occasionally, until they are soft and the skin is charred.

    Cool and Scoop

    Remove the eggplants from the oven and let them cool for about 10 minutes. Once cool enough to handle, cut them in half and scoop the flesh into a mixing bowl, discarding the skin.

    Combine Ingredients

    To the bowl with the roasted eggplant flesh, add tahini, olive oil, lemon juice, minced garlic, salt, cumin, and paprika. Use a fork or a food processor to blend until smooth, adjusting the seasoning with black pepper and more salt if desired.

Serving

    Garnish and Serve

    Transfer the baba ganoush to a serving bowl. Drizzle with olive oil, sprinkle with paprika, and garnish with chopped parsley. Serve with pita bread, crackers, or fresh vegetables.
