Prepare Flax Egg
In a small bowl, mix the flaxseed meal and water. Let it sit for about 5 minutes until it thickens.

Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt until well combined.

Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

Preheat Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.

Once the waffle iron is ready, pour an appropriate amount of batter into the iron (usually about 1/2 to 3/4 cup, depending on the size of your iron). Cook until golden brown, usually about 4-5 minutes.

Repeat the process with the remaining batter until all waffles are cooked.

In a mixing bowl, combine the unsweetened apple sauce, plain vegan yogurt, cinnamon, and maple syrup. Stir until well blended.

Fold in the chopped apples gently into the yoghurt mixture, ensuring even distribution.
