    Prepare the dry ingredients

    In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.

    Combine the wet ingredients

    In a separate bowl, beat the eggs lightly. Add the milk, tahini, apple butter, vanilla extract, and melted butter. Whisk until the mixture is smooth and fully incorporated.

    Mix batter

    Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula or whisk until just combined. Do not overmix; the batter may be slightly lumpy, which is okay.

    Cook waffles

    Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it if necessary. Pour batter into the waffle iron (about 1/2 to 2/3 cup per waffle, depending on your iron) and cook until golden brown and crisp, about 4–6 minutes per waffle. Repeat until all batter is used.

Apple Yoghurt Topping

    Make the apple yoghurt

    In a small bowl, mix the Greek yoghurt with the apple butter, maple syrup (if using), and a pinch of cinnamon. Stir until smooth and creamy. Adjust sweetness to taste.

For Serving

    Assemble and serve

    Place two waffles on each serving plate. Top generously with the creamy apple yoghurt. Drizzle with maple syrup and garnish with fresh apple slices and a sprinkle of toasted sesame seeds, if desired. Serve warm.
