Preparation of Bulgur

Prepare the Bulgur
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of bulgur wheat. Stir, cover, and remove from heat. Let it sit for about 15 minutes until the bulgur absorbs the water and becomes tender.

Combine Ingredients
In a large bowl, fluff the cooked bulgur with a fork. Add the chopped parsley, mint, diced tomatoes, and finely chopped red onion. Mix well to combine all the ingredients.
Dressing the Salad

Prepare Dressing
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Adjust the seasoning to taste.

Pour the dressing over the salad mixture and toss gently until all ingredients are well coated with the dressing.

Let the tabbouleh sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
