    Season the Roast

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, fresh rosemary, and fresh thyme. If using, add olive oil to create a paste.

    Rub the Roast

    Rub the seasoning mixture all over the prime rib roast, ensuring it is evenly coated. Let the roast sit at room temperature for about 1 hour to absorb the flavors.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Roast the Prime Rib

    Place the seasoned prime rib roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the meat, avoiding contact with the bone. Roast in the preheated oven for 20 minutes.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast. Cook until the internal temperature reaches 130°F (54°C) for medium-rare, which will take about 1.5 to 2 hours depending on the size of the roast.

    Rest the Roast

    Once cooked, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes before carving.

Serving

    Carve the Roast

    Using a sharp carving knife, slice the prime rib against the grain into desired thickness. Serve with sides of choice and any drippings or beef broth if desired.
