Marinate the Lamb
In a bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, chopped rosemary, and oregano. Mix well.

Prepare the Lamb
Add the lamb to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Rest the Lamb
Once grilled, let the lamb rest for 5-10 minutes before slicing.
For the Tzatziki Sauce

Combine Ingredients
In a medium bowl, mix together the Greek yogurt, grated cucumber (make sure to drain excess water), minced garlic, chopped dill, lemon juice, salt, and black pepper.

Chill the Sauce
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Pitas
Warm the pita bread on the grill or in a pan for a few minutes until soft and pliable.

Slice the rested lamb thinly. Place a few slices of lamb on each pita, then top with tzatziki sauce, sliced tomato, red onion, and shredded lettuce.

Serve the lamb gyros warm with extra tzatziki sauce on the side.
