Method

Cooking the Pasta

    Boil the water

    In a large pot, bring at least 4 liters of water to a rolling boil. Add 1 tsp of salt to the boiling water.

    Cook the pasta

    Add 200 grams of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a little pasta water for the sauce if desired.

Making the Sauce

    Heat the olive oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté garlic

    Add 3 minced garlic cloves to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

    Add tomatoes and seasonings

    Pour in the 400 grams of canned whole tomatoes, breaking them up with a spoon. Add 1 tsp of dried oregano, 1 tsp of dried basil, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of sugar. Stir well.

    Simmer the sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes until it thickens slightly.

Final Assembly

    Combine pasta and sauce

    Add the drained pasta to the sauce and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

    Serve

    Plate the pasta and garnish with fresh basil leaves and grated Parmesan cheese. Serve immediately.
